Lemon Zucchini Pasta

Zucchini is packed with essential nutrients such as vitamins A and C, potassium and folate. These nutrients play a crucial role in supporting immune function and promoting heart health. Zucchini also contains antioxidants like lutein and zeaxanthin,
which are beneficial for eye health and vision and offer protection from age-related macular degeneration

Ingredients

  • 3 large zucchini
  • Olive oil
  • 2 shallots, extra for topping
  • 4 garlic cloves, minced
  • Pinch red chilli flakes
  • Pinch sea salt & black pepper
  • Packet uncooked spaghetti
  • ½ cup coconut cream
  • ½ cup shaved parmesan
  • Juice 1 large lemon
  • Handful basil leaves

Method


  • Grate zucchini on a large-hole grater. Place grated zucchini in a tea towel or cheesecloth and squeeze out all of the liquid
  • In a large frying pan, heat some olive oil over medium heat. Add zucchini, shallots, garlic, red chilli and sea salt and pepper. Cook for 15 mins
  • Cook spaghetti according to packet instructions. Save ½ cup of cooking water
  • Pour the spaghetti into your frying pan and toss through
  • Add ½ cup of cooking water, coconut cream, parmesan and lemon juice and toss through.
  • Serve topped with extra shredded parmesan, shallots, basil leaves and pine nuts.
