Ingredients
- 2 cups cooked cooled Quinoa – always rinse really well before cooking
- 1 cup bean sprouts – I used adzuki which was lovely with the quinoa
- 2 carrots – grated or Julienned
- handful almonds – activated, toasted and chopped
- handful fresh parsley – chopped
- handful fresh mint – chopped
- ¼ piece of preserved lemon – sliced lengthways
- 2 tbsp goji berries
Method
- Assemble salad ingredients in a large bowl
