Ingredients
- 3 cups rice bubbles
- 1 cup coconut oil, melted
- ½ cup desiccated coconut
- 3 tbsp honey
- 40g chocolate
- 1 tsp vanilla extract
- Pinch salt
Method
- Line a rectangular pan with baking paper. In a large bowl, mix together rice bubbles and desiccated coconut.
- In a small bowl, combine ¾ cup of the melted coconut, honey and vanilla extract, then pour mixture evenly over the rice bubble mix. Mix until well combined and then press mixture firmly into the pan.
- Melt chocolate in a microwave-safe bowl for 30-40 secs and add the remaining ¼ cup coconut oil and pinch of salt. Combine well. Drizzle chocolate mixture evenly across the pan of rice bubble mix. Refrigerate for 2-3 hours.
- Cut into squares or rectangles and serve immediately.
- Tip: While pressing the mixture into the pan, cover with cling wrap and press firmly to stop the mixture sticking to hands.
