This healthy gluten-free cake delivers plenty of dietary fibre to support gut and cardiovascular health, along with protein and calcium for bone health. Ingredients
- 4 organic eggs
- 1 tsp vanilla bean paste or extract
- ¼ cup cold-pressed olive oil
- Juice & zest 1 lemon
- 1/3 cup raw honey or pure maple syrup
- 1¼ cups almond flour
- ¼ cup coconut flour
- 2 tsp baking powder
Method
- Preheat oven to 170°C and grease an 8-inch round cake tin.
- In a large bowl, whisk eggs with vanilla, olive oil, lemon juice and zest, and honey.
- In another bowl, combine almond and coconut flour with baking powder.
- Pour wet ingredients into dry and gently combine.
- Spoon mixture into your cake tin.
- Bake for 35-40 mins or until a skewer comes out cleanly from the centre.
