Herb-Crusted Sardines Recipe
Use this pantry staple to add a tasty dose of Omega-3 and a hefty punch of flavour to your lunch.

Ingredients
- Marinade
- 3 tbsp olive oil
- 1 tsp garlic powder
- 2 tsp Dijon mustard
- 1 tbsp lemon juice
- 1 tbsp Italian herb mix
- ½ tsp salt
- ¼ tsp ground black pepper
- 500g tinned sardines
Savoury Crumb - 100g panko crumbs
- 2 cloves garlic, minced
- 2 tsp olive oil
- 1 tsp dried basil
Method
- Preheat the oven to 200ºC and line a large baking tray.
- Mix all the marinade ingredients together in a bowl and add the sardines.
- Gently toss to coat and then lay out the sardines in a single layer on the tray.
- Bake for 15 mins until golden and slightly crispy.
- Meanwhile, mix the savoury crumb ingredients together and toast in a dry pan (no oil) over medium-high heat until browned and fragrant.
- Serve the sardines warm with a scatter of savoury crumb for crunch. They’re perfect on toast with a slather of tomato relish.
- Note: Use the oil from the tins of sardines in the marinade for additional flavour and less wastage.
