Ingredients
- 500g prawns, peeled & deveined
- Juice 2 limes
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp paprika
- ½ tsp cayenne pepper
- Salt & pepper, to taste
- 1 cup fresh pineapple, diced
- ½ red capsicum, diced
- ¼ red onion, finely diced
- 3 tbsp pickled jalapeños, chopped
- Juice 1 lime
- 2 tbsp fresh coriander, chopped
- Salt, to taste
Method
- In a bowl, combine the lime juice, olive oil, minced garlic, paprika, cayenne pepper, salt and pepper. Mix well to create a marinade.
- Place the prawns in a shallow dish and pour the marinade over them. Toss to coat. Allow to marinate for 15-20 mins.
- Preheat the grill to medium-high heat.
- To prepare the pineapple salsa, combine the diced pineapple, capsicum, red onion, jalapeño pepper, lime juice, chopped cilantro and salt and mix well to combine. Set aside.
- Once grill is hot, place the marinated prawns directly onto the grill grates. Cook for approximately 2-3 mins each side, or until prawns are opaque and slightly charred. Remove and transfer to a serving platter.
- Garnish grilled lime prawns with fresh coriander and serve alongside the pineapple salsa.
- Tip: For an extra burst of freshness, add diced avocado to the pineapple salsa. It adds a creamy texture and complements the flavour of the prawns and pineapple beautifully. This dish can also be served with a side of coconut rice.
