Ingredients
- 3 peaches
- 3 large plums
- 180g haloumi
- 150g goat’s cheese
- ¼ cup loose basil leaves
- ¼ cup loose mint leaves
- Balsamic glaze or olive oil
- Cracked black pepper
Method
- Carefully slice the cheeks of the stone fruit into 3 slices on each side.
- Heat a grill pan over high heat and lay the fruit slices on the hot pan.
- Cook for a couple of mins each side, without moving, until they get blackened grill marks
- Carefully remove and sit on a plate.
- Slice the haloumi into thirds, and then use a cookie cutter or knife to cut rounds of cheese.
- Grill these rounds on the hot pan until they have grill marks and are caramelised and softened.
- To make the stacks, start with the fruit and then add a layer of cheese, a few leaves of herbs, fruit, cheese, herbs, fruit.
- I used these combinations: peach with goat’s cheese and basil; or plum with haloumi and mint.
- You can finish them off with a drizzle of olive oil, balsamic glaze or cracked pepper.
- Scatter any remaining leaves around the serving plate.
