Green peas are a great source of plant protein, which helps you feel satisfied after eating and helps balance your blood-sugar levels. Peas also contain iron, which is needed to make red blood cells for transporting oxygen around the body along with producing energy.

Ingredients

  • 2 leeks, thinly cut
  • 2 medium potatoes, chopped
  • 4 cups vegetable stock
  • 2 cups frozen peas
  • 1 small bunch broccoli
  • 1/3 cup coconut milk
  • Juice ½ lemon
  • Pinch chilli flakes
  • Handful baby spinach
  • Greek yoghurt & pumpkin seeds to serve

Method


  • Bring leeks, potato, stock and broccoli to the boil, then allow to simmer for 20 mins
  • Add peas and baby spinach and simmer for 5 mins.
  • Blend the mixture until well combined.
  • Divide into four soup bowls and then top with a spoonful of Greek yoghurt and roughly chopped pumpkin seeds.
