Gratitude Buddha Bowl

Buddha bowls are easy, nourishing, and make for great airplane food. Here’s a simple recipe to get you started.

Ingredients

  • Steamed Rice
  • Chopped capsicum
  • Chopped red cabbage
  • Chopped spring onions
  • Chopped carrot
  • Handful of buckinis
  • Goji berries
  • Chia Seeds
  • Hemp Seeds
  • Chopped nuts of your choice
  • 2 garlic cloves
  • 1/2 tsp Himalayan Pink salt
  • 1/2 cup hulled tahini
  • 1/3 cup fresh lemon juice
  • 1/4 cup water
  • 1/4 cup olive oil
  • 1 tablespoon finely chopped fresh flat-leaf parsley
  • Pepper to taste

Method


  • In a mortar mince the garlic with the salt. Whisk together garlic paste and remaining ingredients until combined well. Add just enough sauce to the Buddha Bowl to coat all the ingredients. The rest of the sauce can be stored in a fridge for a couple of days.
