Ingredients
- 1 watermelon, peeled, deseeded & diced
- 2 cucumbers, peeled & diced
- ½ cup fresh herbs (mint & basil)
- 1 cup Greek feta, crumbled
- Honey & Lime Dressing
- 1 tbsp honey
- Juice 1 lime
- 2 tbsp extra-virgin olive oil
- Salt & pepper, to season
Method
- In a large bowl combine the watermelon, cucumber and fresh herbs and toss to combine.
- To make the dressing, whisk the honey, lime juice and olive oil together in a small bowl. Season to taste.
- Top the watermelon salad with the dressing, sprinkle with feta cheese and serve.
