Fennel, Thyme & Chilli Barbecue Chicken Marylands

Fennel and thyme are beautiful spices to combine. Throw in a little ground chilli and you’ve got a barbeque chicken dish everyone will love.

Ingredients

  • 3 tbsp olive oil
  • 2 tsp ground fennel
  • 2 tsp dried thyme
  • 1–2 tsp chilli powder
  • 1 tsp salt
  • 1 tsp pepper
  • 4 chicken Marylands
  • Mixed salad leaves, to serve
  • 1 lemon, quartered

Method


  • Combine oil, fennel, thyme, chilli salt and pepper.
  • Place chicken in a zip-lock bag, add marinade, zip up the bag and massage the marinade into the chicken.
  • Place in the fridge and marinate for 1 hour.
  • Heat barbecue over medium flame and grill chicken until brown on both sides, with the hood down, turning every few mins until just cooked through.
  • Serve with mixed salad leaves and a spritz of lemon juice.
  • Tip: Make sure you close the hood on your barbecue to help the chicken cook close to the bone quicker.
