Fennel, Thyme & Chilli Barbecue Chicken Marylands
Fennel and thyme are beautiful spices to combine. Throw in a little ground chilli and you’ve got a barbeque chicken dish everyone will love.

Ingredients
- 3 tbsp olive oil
- 2 tsp ground fennel
- 2 tsp dried thyme
- 1–2 tsp chilli powder
- 1 tsp salt
- 1 tsp pepper
- 4 chicken Marylands
- Mixed salad leaves, to serve
- 1 lemon, quartered
Method
- Combine oil, fennel, thyme, chilli salt and pepper.
- Place chicken in a zip-lock bag, add marinade, zip up the bag and massage the marinade into the chicken.
- Place in the fridge and marinate for 1 hour.
- Heat barbecue over medium flame and grill chicken until brown on both sides, with the hood down, turning every few mins until just cooked through.
- Serve with mixed salad leaves and a spritz of lemon juice.
- Tip: Make sure you close the hood on your barbecue to help the chicken cook close to the bone quicker.
