Edamame Wonton Parcels Recipe

These parcels are a lovely way to enjoy edamame. They make a delicious healthy afternoon snack or entrée at a dinner party.

Ingredients

  • 1 cups pre-cooked & shelled edamame beans
  • 1 tsp lemon juice
  • 1 tsp sesame oil
  • 3 garlic cloves, crushed
  • ½ tsp chilli flakes
  • 1 tsp cumin
  • 2 spring onions, sliced, plus more for garnish
  • Pinch salt & pepper
  • 1 packet wonton wrappers
  • Mixed leaves, to serve
  • Soy sauce or tamari, to serve

Method


  • Combine edamame beans with lemon juice, sesame oil, garlic, chilli flakes, cumin and spring onion in blender. Add pinch of salt and pepper and blend to rough paste. Add a few tablespoons of water to assist with mixing if needed.
  • Remove paste from blender and place in bowl. Take 1 fresh wonton paper and place 1 teaspoon of paste in centre. Fold wonton in half and wet edges that touch to bind them together. Continue to make wonton parcels until mixture is used.
  • Heat non-stick frypan and add a few parcels at a time and brown quickly on both sides.
  • Pour half cup water over wontons and cook until water has evaporated, then set aside and continue cooking rest of wontons.
  • Serve on bed of mixed leaves with tamari or soy dipping sauce and sprinkle of spring onion on top.
