Ingredients

  • 2 cups fresh spinach
  • ½ tbsp extra-virgin olive oil
  • 1 bunch cherry tomatoes
  • 100g Sunny Queen Farms The Odd
  • Eggs Ready-to-Pour Egg Mix
  • Salt & pepper, for seasoning
  • ¼ cup crumbled feta
  • ½ tbsp lemon juice
  • Fresh herbs, for seasoning
  • ½ tbsp extra-virgin olive oil

Method


  • Steam spinach in pan with water until wilted and place in a bowl.
  • Add extra-virgin olive oil to a frying pan with and steam a bunch of cherry tomatoes until softened. Place aside.
  • Pour the egg mix into a flat non-stick frying pan and cook over medium heat until top is almost cooked. Season to your liking.
  • Add spinach and crumbled feta on top of the omelette, slide onto a serving plate and fold. Serve with a drizzle of lemon juice, herbs and tomatoes.
