Crustless Quiche
Kfibre™ is a complex fibre made from sugarcane with most of the sucrose removed. This chemical-free process preserves the cell wall components and results in a high 87 per cent content of total dietary fibre with prebiotic effects. Such fibre contains both soluble and insoluble fractions in addition to retaining complex micronutrients and polyphenols.

Ingredients
- ½ cup chopped broccoli
- ½ cup leek
- Salt & pepper
- 1½ cups grated cheese
- ¼ cup gluten-free
- self-raising flour
- 1 tbsp Kfibre
- 4 eggs
- 1½ cups milk
- ½ cup sliced zucchini
- Parsley, to garnish
Method
- Heat oven to 200°C and grease a 30cm baking dish
- Place broccoli, leek, flour, Kfibre, cheese salt and pepper in a bowl and mix well. Scatter over the base of a greased baking dish.
- Combine the eggs and milk in a bowl and whisk to combine. Pour egg mixture over the vegetables and top with sliced zucchini. Bake for 40-45 mins until golden and puffy.
