Ingredients
- 1 bag of CORN THINS® or RICE THINS™ slices
- ½ cup raisins
- 1 cup sunflower seeds
- 1 cup hazelnuts or your favourite nuts, roughly chopped
- ½ cup extra-virgin olive oil
- ½ cup honey
- ¼ tsp salt
- 1 tsp ground ginger
- ¼ tsp ground cinnamon
Method
- Preheat your oven to 160ºC.
- Place the CORN THINS® slices into a food processor and process until medium crumbs.
- Place the CORN THINS® crumb, raisins, sunflower seeds and nuts into a mixing bowl.
- In a separate bowl, add the oil, honey, salt, ginger and cinnamon. Whisk with a fork, then pour into the bowl with the CORN THINS® mix.
- Line a baking tray with baking paper and pour the mix onto the tray. Place the tray into the oven and bake for 10 mins.
- Remove the tray and stir the mixture with a spatula so the outside parts are moved into the centre and the centre parts are pushed outwards.
- Bake for another 10 mins, stir again and bake for a final 8–10 mins, until golden roasted and evenly baked.
- Remove the mixture and press down firmly to help to create clusters. Allow the mixture to cool.
- Break final product into pieces and store in an airtight container until ready to use.
