CORN THINS Slices with Tabouli
Refreshing tabouli with bulgur or quinoa, topped on CORN THINS for a light, flavorful bite of fresh herbs and veggies.

Ingredients
- 3 tbsp of bulgar wheat (or quinoa as a GF alternative)
- 1 packet CORN THINS slices
- 1 large bunch parsley, fi nely chopped
- 1 small bunch mint, fi nely chopped
- 3 tomatoes, diced
- 3 spring onions, finely chopped
- 1/3 cup extra-virgin olive oil
- Juice 1-2 lemons
Method
- Soak the bulgar wheat (or quinoa), covered, in boiling water for 10-20 mins (or until grains are no longer hard). If using quinoa, rinse before boiling.
- Drain and squeeze out the excess water.
- Combine all ingredients and mix well.
- Top your desired number of CORN THINS slices with tabouli.
