Chocolate and raspberry pudding

This sweet and rich bowl of goodness is filled with berries, bananas and all-round goodness and can be enjoyed as a healthy dessert. It’s high in antioxidants, low in sugar and delicious in taste. While I’ve used fresh raspberries here, don’t underestimate the power of the frozen berry. Christmas is avocado season, so the good news is that this luscious dessert won’t break the bank!

Ingredients

  • 2 frozen bananas
  • 1 ripe avocado, peeled
  • 1 cup raspberries
  • 2 tbsp raw cacao powder
  • 1 tsp vanilla powder
  • ½ cup yoghurt or coconut yoghurt
  • ½ cup almond milk or milk of your choice

  • Toppings
  • Edible flowers, passionfruit, banana, raspberries, blueberries, strawberries, almonds, pepitas, chia seeds, flaked coconut, cacao nibs, granola, nut butter

Method


  • Blend all ingredients except toppings in high-speed blender until smooth and creamy. The mixture should have a spoonable consistency.
  • Pour into two bowls and decorate with chosen toppings.
