Chia Pudding Layered with Yoghurt & Berries
Chia puddings make a healthy treat for lunchboxes. Chia seeds are loaded with beneficial omega-3 fats to boost your kids’ brain function, and dietary fibre to help keep them regular.

Ingredients
- ¼ cup chia seeds
- ¼ cup water
- 1 cup coconut milk
- 1 tsp vanilla extract
- 1 tbsp honey
- Vanilla yoghurt
- Mixed berries
Method
- In a medium bowl combine chia seeds and water and allow it to sit for 2 mins.
- Add coconut milk, vanilla and honey and stir until well combined.
- Half fill containers (with lids) with chia mixture and then place in the fridge overnight. The next morning top with yoghurt and berries ready for your kids’ school lunch.
