Chia puddings make a healthy treat for lunchboxes. Chia seeds are loaded with beneficial omega-3 fats to boost your kids’ brain function, and dietary fibre to help keep them regular.

Ingredients

  • ¼ cup chia seeds
  • ¼ cup water
  • 1 cup coconut milk
  • 1 tsp vanilla extract
  • 1 tbsp honey
  • Vanilla yoghurt
  • Mixed berries

Method


  • In a medium bowl combine chia seeds and water and allow it to sit for 2 mins.
  • Add coconut milk, vanilla and honey and stir until well combined.
  • Half fill containers (with lids) with chia mixture and then place in the fridge overnight. The next morning top with yoghurt and berries ready for your kids’ school lunch.
