These tasty dinner essentials are made using Aussie-made, Italian-style cheese from That’s Amore and are sure to become regulars in your recipe rotation!

Ingredients
- 2 zucchinis
- 2 garlic cloves, peeled & chopped
- 1 cup fresh basil leaves
- 2 tbsp pine nuts
- Salt & pepper, to taste
- 1 tbsp lemon juice
- Extra-virgin olive oil
- 400g farfalle pasta
- 100g Stracciatella cheese
Method
- Grate the zucchini and squeeze out as much water as possible.
- Add the zucchini, garlic, basil and pine nuts to the food processor.
- Puree until finely minced. Add salt, pepper, lemon juice and 2 tbsp of olive oil. Puree until smooth and creamy. If too thick, add additional olive oil or a little water until thinned out, and set aside. (This will be your zucchini pesto.)
- Bring salted water to the boil. Add pasta and cook as per instruction on packet.
- Once the pasta is cooked, strain and add it into the large bowl with zucchini pesto. Give the pasta a good toss until pesto is evenly spread throughout the pasta. Plate up and finish with a tablespoon of Stracciatella cheese.
