Charred Eggplant with Hummus & Sesame Seeds
You can easily double or triple this recipe to make as much or as little as you need. Allow one medium eggplant per person and a couple of tablespoons of hummus.

- 1 eggplant
- 1 tbsp hummus
- Salt & pepper, to taste
- 1 tsp sesame seeds
Method
- Turn a gas flame cooktop to low and char the eggplant. Keep it moving over the flame until it softens and slightly collapses.
- Place a couple of tbsp hummus on a plate.
- Scrape away the burnt exterior of the eggplant and lay it on the hummus.
- Season with salt and pepper and scatter over sesame seeds.
