Manchego is a delicious traditional Spanish cheese made with sheep’s milk. It’s worth spending a little more on a good-quality one that almost tingles on your tongue. In this dish, the Manchego pairs beautifully with the sweetness of the onions.

Ingredients
- 1 red onion, sliced
- ½ tbsp ghee or oil
- 6–7 cherry tomatoes, halved
- ½ cup Manchego, cubed
Method
- Sauté onion with oil over low heat until lovely and caramelised.
- Arrange onion, tomato and Manchego on small plate and serve as tapas.
