Caramelised Onion, Cherry Tomatoes and Manchego Recipe

Manchego is a delicious traditional Spanish cheese made with sheep’s milk. It’s worth spending a little more on a good-quality one that almost tingles on your tongue. In this dish, the Manchego pairs beautifully with the sweetness of the onions.

Ingredients

  • 1 red onion, sliced
  • ½ tbsp ghee or oil
  • 6–7 cherry tomatoes, halved
  • ½ cup Manchego, cubed

Method


  • Sauté onion with oil over low heat until lovely and caramelised.
  • Arrange onion, tomato and Manchego on small plate and serve as tapas.
