Buttery Eggs with Basil & Goat’s Cheese Recipe

Scrambling your eggs in butter isn’t just crazy delicious, it also gives the eggs a divine silky texture. You can add any other ingredients to these eggs that you like, but I don’t think you can beat the combination of basil and goat’s cheese.

Ingredients

  • 1 tbsp butter
  • 4 eggs
  • Salt & pepper, to taste
  • 1 tbsp finely chopped basil
  • 50g goat’s cheese
  • 2 cups baby spinach leaves

Method


  • Place the butter in a pan then crack the eggs into it.
  • Cook over medium heat, stirring constantly. As the pan warms up, the butter will melt and combine with the eggs to create a silky scramble. Season the eggs as they cook.
  • When the eggs are barely set, remove from the stove and stir the basil and goat’s cheese through. The residual heat will finish cooking the eggs.
  • Serve over baby spinach leaves.
  • Note: Add bacon to the side for a bigger breakfast.
