Scrambling your eggs in butter isn’t just crazy delicious, it also gives the eggs a divine silky texture. You can add any other ingredients to these eggs that you like, but I don’t think you can beat the combination of basil and goat’s cheese.
Buttery Eggs with Basil & Goat’s Cheese Recipe
These scrambled, buttery eggs are crazy delicious, with a divine silky texture and the perfect combination of basil and goat’s cheese.

Ingredients
- 1 tbsp butter
- 4 eggs
- Salt & pepper, to taste
- 1 tbsp finely chopped basil
- 50g goat’s cheese
- 2 cups baby spinach leaves
Method
- Place the butter in a pan then crack the eggs into it.
- Cook over medium heat, stirring constantly. As the pan warms up, the butter will melt and combine with the eggs to create a silky scramble. Season the eggs as they cook.
- When the eggs are barely set, remove from the stove and stir the basil and goat’s cheese through. The residual heat will finish cooking the eggs.
- Serve over baby spinach leaves.
- Note: Add bacon to the side for a bigger breakfast.
