Blueberry & Mascarpone Parcels

These little blueberry parcels are quick and easy to whip up. You can also shallow-fry them in good oil for a different texture. Try this yummy recipe in the comfort of your own kitchen.

Ingredients

  • 1 punnet blueberries
  • ¼ cup mascarpone
  • 1 tsp almond meal
  • 1 tbsp honey
  • 16 wonton wrappers
  • 1 egg, lightly beaten
  • 1 tsp coconut sugar (optional)

Method


  • Preheat oven to 200°C and line oven tray with baking paper.
  • Combine blueberries, mascarpone, almond meal and honey in bowl.
  • Lay wonton wrappers flat and lightly brush outer edges with egg.
  • Spoon around 8 berries onto each wrapper and bring corners together to form a triangle. Press edges to seal and place on baking tray.
  • Brush tops lightly with egg and sprinkle with a little coconut sugar (if desired).
  • Bake for 10 mins or until golden.
  • Serve with dark chocolate ganache and more fresh berries or chocolate.
  • Tip: These are also delicious in puff pastry!
