- 4 cups blueberries
- 1 tbsp water
- ½ cup chia seeds
- 2 cups coconut milk
- 4 tbsp maple syrup
- 2 tsp vanilla essence
- Coconut flakes
- Chia seeds
- Crushed pistachios
- Granola
- Maple syrup
Method
- Place 3 cups blueberries and water in a saucepan over medium-high heat. Stir occasionally until a thick blueberry compote is formed. Remove from heat and set aside.
- Add the chia seeds, coconut milk, maple syrup and vanilla essence in a bowl and whisk together until well combined.
- Pour the blueberry compote into the chia mixture and mix together. Place the mixture in the fridge for 1 hour to set.
- Serve in small bowls or jars with the extra blueberries, toppings and a drizzle of maple syrup for a touch of sweetness.
