Blueberry Chia Pudding

Ingredients

  • 4 cups blueberries
  • 1 tbsp water
  • ½ cup chia seeds
  • 2 cups coconut milk
  • 4 tbsp maple syrup
  • 2 tsp vanilla essence
  • Coconut flakes
  • Chia seeds
  • Crushed pistachios
  • Granola
  • Maple syrup

Method


  • Place 3 cups blueberries and water in a saucepan over medium-high heat. Stir occasionally until a thick blueberry compote is formed. Remove from heat and set aside.
  • Add the chia seeds, coconut milk, maple syrup and vanilla essence in a bowl and whisk together until well combined.
  • Pour the blueberry compote into the chia mixture and mix together. Place the mixture in the fridge for 1 hour to set.
  • Serve in small bowls or jars with the extra blueberries, toppings and a drizzle of maple syrup for a touch of sweetness.
