Blackberry and Apple Crumble Muffins Recipe
These tasty muffins are jam-packed with protective antioxidants and dietary fibre that help neutralise free radicals in the body and support cardiovascular health. Apples contain soluble fibre that helps to lower cholesterol levels, and polyphenols that can lower high blood pressure and reduce the risk of stroke.

Ingredients
- 1½ cups oat flour
- 1 cup almond meal
- 1 tsp baking powder
- ½ tsp bicarbonate of soda
- ½ tsp ground cinnamon
- ⅓ cup coconut oil, melted
- ⅓ cup raw honey
- 2 organic eggs
- 1 tsp vanilla bean extract or paste
- ¾ cup diced & peeled apples
- ¾ cup sliced blackberries

Topping - ⅓ cup almond meal
- 2 tbsp coconut sugar
- 2 tbsp flaked almonds
- 2 tbsp whole oats
- 3 tbsp coconut oil, softened
- ½ tsp ground cinnamon
- 1 tbsp raw honey
Method
- Preheat oven to 180°C and grease 12-cup muffin pan or line with paper cases.
- In medium-sized bowl mix oat flour, almond meal, baking powder, bicarb and cinnamon.
- In another bowl whisk together coconut oil, honey, eggs, and vanilla.
- Pour wet ingredients into dry and combine.
- Gently mix through apple and blackberries. Spoon mixture into muffin tray.
- Combine topping ingredients in small bowl. Add extra honey if mixture is too dry.
- Top muffin mixture with topping and bake for 30 mins, until a skewer comes out cleanly.
