Black Bean Burger with Halloumi & Beetroot Relish
Black beans are beneficial for supporting cardiovascular health. Black beans contain vitamin B, iron, unsaturated fats and soluble fibre which are important for promoting heart health and keeping cholesterol levels in check.

Ingredients
- ½ cup walnuts
- Olive oil
- 1 medium onion, finely chopped
- 2 tins black beans, rinsed & drained
- ½ cup cooked brown rice
- ½ cup breadcrumbs or gluten-free breadcrumbs
- Handful coriander, leaves finely chopped
- ½ tsp chilli flakes
- 1 tsp ground paprika
- 4 slices halloumi
- 4 buns
- Beetroot or tomato relish, store bought Rocket
Method
- In frying pan, dry roast walnuts until golden then roughly chop them.
- Add olive oil to your frying pan and cook onions until cooked through.
- Place black beans, walnuts, onion, rice, breadcrumbs, coriander, chilli, paprika and tomato sauce in your food processor and pulse until combined. Don’t over-blend it — you still want it to be chunky.
- Make 4 large patties and place them on a plate, covered, then put in the fridge for 2 hours.
- Cook patties in your frying pan with some olive oil over medium heat for 4 mins each side until golden.
- Cook halloumi in the frying pan until golden each side.
- Toast your halved buns in the frying pan and then top them with a patty, beetroot relish, halloumi and rocket.
