Ingredients

  • Avocado & Coriander Dressing
  • 1 medium avocado
  • ½ cup mint leaves
  • ½ cup coriander leaves
  • Juice 1 lemon
  • 1 garlic clove, crushed
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • ½ tsp sea salt
  • 4 tbsp cold-pressed olive oil

Method


  • Place dressing ingredients in a food processor and pulse until well combined. Pour into a small serving bowl. For those who like it hot, add 1–2 Jalapeno chillies.
