Recipe

Ingredients

  • 4 whole corn cobs
  • ½ cup whole egg mayonnaise
  • ½ cup sour cream
  • ¼ tsp cayenne pepper
  • 1 tsp minced garlic
  • 2 tbsp chopped fresh coriander, divided
  • 1 cup freshly grated parmesan, plus 1 tbsp for garnish

Method

  • Peel the husks back from the corn, gathering them at the base, and strip the silk from inside.
  • Heat your barbecue well and place the corn on it, turning it to cook evenly.
  • You want your corn to start to blacken and char as that is what gives it such amazing flavour. Cooking it for 3 mins per side is a good gauge.
  • Mix the sauce ingredients in a small bowl, keeping 1 tbsp each of coriander and parmesan aside for garnish.
  • Once your corn has cooked, brush it all over with the cheesy sauce and then sprinkle with the remaining coriander and parmesan before serving.
  • Can be served with a squeeze of lime if desired.
