Ingredients

  • 1 large potato, diced
  • 1 tsp cumin seeds
  • 1 onion, finely diced
  • 1 green chilli, finely diced
  • 2 cloves garlic, finely chopped
  • 1 thumbnail-size piece of ginger, grated
  • 400g tin of tomatoes
  • ½ tsp chilli paste
  • 1 tbsp garam masala
  • 1 tbsp date syrup
  • 1 cup frozen peas
  • 2 cups cooked brown rice, to serve

Method


  • Place the potatoes in a saucepan and cover with cold water. Bring to the boil and cook until tender.
  • Meanwhile, heat a wok over a high heat. Add the cumin seeds, onion, chilli, garlic and ginger and sauté until the onion is soft and translucent.
  • Add the tomatoes, chilli paste, garam masala and date syrup and then mix well.
  • Cook until the tomatoes become a thick paste, add 1 cup of water and stir. Add the cooked potatoes, then add the peas and season to your taste.
  • Bring the curry to the boil and simmer for a couple of minutes, then serve with brown rice.
