This is my Middle-Eastern-inspired dressing which I use on anything from salads to roasted vegetables; it’s especially good on roasted cauliflower. I’ll keep a jar of this in the fridge and use it throughout the week.

This is my Middle-Eastern-inspired dressing which I use on anything from salads to roasted vegetables; it’s especially good on roasted cauliflower. I’ll keep a jar of this in the fridge and use it throughout the week.

Ingredients
- 80g hulled white tahini
- 90mL extra-virgin olive oil
- 75mL lemon juice
- 2 tbsp raw honey
- ½ clove garlic, crushed
- ½ tsp ground cumin
- ½ tsp sea salt
Method
- Add all ingredients to glass jar, put lid on and give it a good shake. Make sure you shake it until honey has completely broken up and combined with other ingredients.
- Place in fridge to allow it to thicken slightly then use as dressing on salad greens or roasted cauliflower.
