Sunday Morning Pancakes Recipe

My lovely husband likes to make our girls pancakes on Sundays and it has become a bit of a tradition in our house. We generally mix it up, but one of the favourite recipes is these banana pancakes. And the best thing is you can put the entire thing together in the blender — too easy!

Sunday Morning Pancakes Recipe

Ingredients

  • 1½ cups rolled oats
  • 1 cup roughly mashed ripe banana (approx. 2 bananas)
  • 1¼ cups milk of choice
  • ½ cup coconut milk
  • ½ tsp ground cinnamon
  • 1 tsp vanilla
  • 1 heaped tbsp nut butter
  • 2 eggs
  • Pinch sea salt
  • ¼ tsp baking soda
  • Coconut oil, for cooking

Method


  • Add oats to blender and blitz to flour.
  • Add remaining ingredients and blend until smooth.
  • Warm frypan over medium heat and add around 1 tsp coconut oil.
  • Add ¼ cup amounts of mixture to frypan and cook pancakes for a couple of mins until bubbles begin to appear on surface.
  • Flip pancakes and cook for another minute on other side, or until golden.
  • Continue with remainder of batch, adding a little coconut oil to pan from time to time.
  • Enjoy with your favourite toppings.
