Collagen-boosting treats to enjoy this summer

Ingredients
- ½ cup walnuts, roasted
- 3 large beetroots, cubed then roasted or boiled
- 1 tbsp Native Plant-Based Collagen Powder
- ⅓ cup coconut yoghurt
- 2 tbsp tahini (more if you want a thicker dip)
- 2 tbsp olive oil
- 1 tsp ground cumin
- Juice ½ lemon
- Himalayan salt & pepper, to taste
- Handful fresh coriander leaves, to garnish
Method
- Preheat the oven to 190ºC. Put the walnuts on a baking tray and toast in the oven for 5—7 mins, until fragrant. Set aside to cool.
- Once cool, place the walnuts into a food processor or blender and process until roughly chopped. Add the beetroot, Native Plant-Based Collagen Powder, coconut yoghurt, tahini, olive oil, cumin, lemon juice, a pinch of salt and a good grind of pepper, then blend to a thick paste.
- Transfer the dip to a serving dish, garnish with fresh coriander leaves and serve.
- Tip: This hummus is delicious enjoyed with vegetable cruditès and crackers!
