One bowl wonder with coriander and cashew pesto

I have been living a simple  gypsy life on the Australian West Coast. For most of this year I emerged from my caravan to paint, swim, cook, meditate and generally practice wellness. It was amazing for my soul but not so amazing for my finances.

Lou Lou the caravan is now perched in Bremer Bay in the beautiful, wild South West. She is quite the Southern Belle with her pastel colours popping against the grey green sea of native bush.  I have taken a summer job, working in tourism and I now join most of the population in the little wellness dance that is striving for balance.

Eating well prepares my body to work well. With planning and some time put aside for food preparation I can balance work and wellness so that I never have to compromise on eating beautiful wholefood.

There is an art to eating well when you are busy, and boringly, it is all in the planning. Plan ahead and cook extra when you can.  Keep containers of prepared food and sauces in the fridge so that all you have to do is prepare the fresh content and place in a bowl. When you cook quinoa or brown rice make a little extra. If you are using the oven to roast something quickly chop some pumpkin or sweet potato and roast for later in the week. Most days I eat a version of this recipe. One bowl wonder usually has a good grain such as brown rice or quinoa. It always has an abundance of raw alkalizing green vegetables and fresh herbs. Sometimes it has roasted or steamed vegetables.

I like to make pestos and dressings in large amounts so that I can put the salad together and then pile on the flavor goodness. Seeds and sprouts boost the nutritional content. This really is a perfectly balanced nutritional meal that is super easy to prepare and with a little forward planning can be put together in minutes.

The wild South West

Broccoli is a great source of soluble fiber and has great detoxification elements. I love raw food but find too much of it difficult to digest so I like to steam cruciferous vegetables like broccoli for about one minute and then rinse under fresh cold water to stop it from cooking further. Broccoli is high in nutrients including vitamin C, K, iron and potassium. The cashew and coriander pesto is a star and will elevate this bowl of wonder to a taste sensation.
