Here’s a sweeter style of risotto that combines antioxidant-rich black rice with coconut milk and spices for a comforting treat.
Australia is blessed with a plethora of edible native plants. Many of these lesser-known Indigenous delights can be used in your kitchen to create delicious and nutritious meals.
Cornish pasties are one of my favourite comfort foods, but it’s hard to find a good one these days. Making your own, although more effort, gives you control over the ingredients and flavours. This recipe outlines a good, traditional base to start with, but feel free to change the filling as you see fit.
There is a direct and proven link between the food you eat and the health of your nervous system and therefore your mood. Choosing the right foods in tasty meals can have major, and rapid, effects on your nervous system and how you feel.
This is a gorgeous, hearty take on risotto using barley instead of rice, which delivers a lovely chewy, nutty flavour along with a good serve of fibre, selenium, manganese, B vitamins and magnesium.
I’ve been making versions of these biscuits since the kids were little. The original recipe is inspired by Jude Blereau. They are a great everyday biscuit sweetened with maple syrup and lend themselves to any sort of flavouring — ginger, chocolate, cardamom. I have used star anise here as I love the little aniseed hit.
To me, the flavours of Portugal are zingy citrus, olives, olive oil and fresh herbs. I have combined these flavours to create a dense cake, almost a torte, in the hope it takes you to Portugal.
I absolutely love the combination of the okra with this incredible rice! This is a very simple method of cooking the okra, which could be used with many different flavours. It’s worth tracking down the kefir lime leaves as they really lift the entire dish.
Okra makes a surprising addition to these lovely spiced puffs, which are perfect for lunch or lunch boxes, or as a side for dinner.
This heavenly flavour combination makes a gorgeous breakfast or a lovely dessert. If you can’t get hold of any lemon verbena, lemon balm makes a great substitute or, alternatively, mint or basil work well, too. Outside of nectarine season, blueberries make a lovely replacement.
This is a super-simple salad that works well as a light lunch or as a side to a more substantial meal.
I love ginger snaps and these are a slightly chewier version that really pack a punch. The hit of ginger makes these cookies a nice little tonic for settling digestion due to ginger’s anti-nausea and anti-inflammatory properties, and the molasses provides iron-rich nourishment and a gorgeous rich flavour.
