Quick Broccoli Fritters

These grab-and-go fritters are fabulous to get some veggies on the run. Perfect to whizz up then fry, the taste of these will have you and the kids coming back for more!

Ingredients

  • 3 cloves garlic
  • 250g broccoli
  • 50g parmesan, finely grated
  • 1 free-range or organic egg
  • 40g wholemeal spelt flour
  • Sea salt & freshly ground black pepper, to taste
  • 4 tbsp olive oil

Method


  • In a food processor, add the garlic while the blade is running.
  • Add the broccoli and parmesan and process until it is well minced.
  • Scrape the sides of the processor and add the egg, blend for 5 seconds to mix.
  • Add the flour and seasoning and mix to combine, scraping the sides if necessary.
  • Heat the olive oil in a pan and form a patty with damp hands, about the size of a golf ball, flattened.
  • Cook over a low to moderate heat until crisp on both sides.
