Mediterranean Mince

Combining a whole lot of nutritious ingredients into a simple meal that can be reheated for those on the go!

Ingredients

  • 1 tsp olive oil
  • 500g beef or lamb mince
  • 1 punnet cherry tomatoes, halved or quartered
  • 1 capsicum, thinly sliced
  • Handful fresh parsley
  • 1 tsp dried oregano
  • ½ tsp garlic salt
  • 1 tsp paprika
  • ½ tsp pepper
  • 2 cups spinach leaves
  • 8-10 wraps

Method


  • Heat oil in a pan over medium-high heat. Add in mince and stir until cooked through and browned.
  • Add in cherry tomatoes, capsicum, herbs, seasoning, then stir and cook for another 2-3 mins.
  • Add in spinach leaves and cook through for another 2-3 mins. Remove from heat.
  • Layer mince on wraps and top with crumbled feta.
  • Serve immediately.
  • Instead of wraps, the kids may enjoy this recipe on toast.
