Ingredients

  • Box Explore Cuisine Fava Bean Fusilli
  • 60mL olive oil
  • 2 garlic cloves, thinly sliced
  • ½ tsp hot pepper flakes
  • 200g cherry tomatoes
  • 20g fresh basil leaves, plus more for garnish
  • 60g baby arugula
  • Kosher salt & freshly ground black pepper, to taste

Method


  • Bring a large pasta pot filled with water to a boil. Season with salt, and cook Explore Cuisine’s Fava Bean Fusilli according to package directions.
  • Add olive oil to a high-sided sauté pan over medium heat.
  • Add sliced garlic and cook for 30 secs, then add hot pepper flakes, cherry tomatoes and basil. Cover and let cook for 10 mins until tomatoes begin to burst.
  • Turn heat to low, remove the lid, and season with salt and pepper.
  • Once the pasta has been cooked, drain (reserve 1 cup of pasta water) and add the pasta directly to cherry tomato sauce. Toss pasta until evenly coated.
  • Turn off heat, toss in arugula until it begins to wilt. Adjust the consistency of the sauce with reserved pasta water if needed.
  • Divide between bowls. Serve garnished with more basil.
