Danish meatloaf is a protein-rich, crowd-pleasing dish that combines beef and pork mince, herbs and warming spices, all wrapped in crispy bacon. It’s an easy and delicious way to elevate your family dinner.

Ingredients
- 4 cloves garlic, minced
- 1 bunch fresh parsley leaves, finely chopped
- 1 large red onion, grated
- 1 cup fresh breadcrumbs
- 500g beef mince
- 500g free-range pork mince
- 2 tsp Dijon mustard
- 1 tbsp Worcestershire sauce
- ½ tsp dried thyme
- ½ tsp ground nutmeg
- 2 free-range or organic eggs
- Sea salt & freshly ground black pepper, to taste
- 6 rashers short-cut streaky bacon
Method
- Preheat your oven t o 180°C (fan-forced).
- Line a loaf tin with baking paper.
- Start by preparing your ingredients (garlic, parsley, onion and make fresh breadcrumbs) either by hand or using a food processor, and place in a large mixing bowl with all the remaining ingredients except the bacon.
- Combine well using clean hands or a large spoon.
- Place the rashers of bacon in the base of the loaf tin, then press the mince mixture into the loaf tin firmly.
- Bake for 45 mins or until the meat feels firm in the middle.
- Once cooked, invert onto a serving plate and remove the baking paper.
- Place the meatloaf under a grill (broiler) until the bacon is golden brown.
- Serve immediately with tomato sauce, gravy or the sauce of your choice.
