Healthy Instant Noodles

This healthy instant noodle recipe is the perfect quick and nourishing meal for busy workdays. Buckwheat noodles are a great source of complex carbohydrates and fibre and are gluten-free. Edamame is a rich source of plant-based protein and dietary fibre, promoting digestive health, regulating blood sugar and supporting heart health by lowering cholesterol. It also provides essential minerals like iron for oxygen transport and magnesium for muscle, nerve and bone health.

Ingredients

  • 1 serving instant buckwheat noodles (or instant rice noodles)
  • ½ small carrot, shredded
  • ½ nori sheet, shredded
  • 1 spring onion, finely chopped
  • ½ cup edamame beans (optional)
  • Small handful roughly chopped shiitake mushrooms (optional)
  • 1 tbsp finely grated ginger
  • Chilli flakes, to taste
  • 1 tbsp white miso paste
  • ½ tsp sodium-reduced veggie stock powder
  • 1 tbsp toasted sesame seeds
  • Small handful finely chopped parsley

Method


  • Place all ingredients in a jar.
  • When ready to eat, fill with boiling water. With the lid on, give it a gentle shake and let it sit covered for 10 mins.
  • Eat it straight from the jar or place it in a bowl and enjoy.
