Maple Macadamia Granola

Ingredients
- 2 cups rolled oats
- ½ cup macadamias, roughly chopped
- ¼ cup flaxseeds (linseeds)
- ¼ cup pumpkin seeds
- ¼ cup coconut flakes
- ½ tsp salt
- 2 tbsp coconut oil
- 2 tbsp maple syrup
- Coconut milk, to serve
- Fresh blueberries, to serve
Method
- Heat a large frying pan over medium–low heat. Add the oats, macadamias, seeds, coconut flakes and salt. Stir until golden, then pour coconut oil over the oat mixture and remove from heat
- Drizzle maple syrup over and stir well. Let the mixture cool to room temperature.
- Serve the granola with coconut milk and fresh blueberries. Store the rest in an airtight jar
