Maple Macadamia Granola

Ingredients

  • 2 cups rolled oats
  • ½ cup macadamias, roughly chopped
  • ¼ cup flaxseeds (linseeds)
  • ¼ cup pumpkin seeds
  • ¼ cup coconut flakes
  • ½ tsp salt
  • 2 tbsp coconut oil
  • 2 tbsp maple syrup
  • Coconut milk, to serve
  • Fresh blueberries, to serve

Method


  • Heat a large frying pan over medium–low heat. Add the oats, macadamias, seeds, coconut flakes and salt. Stir until golden, then pour coconut oil over the oat mixture and remove from heat
  • Drizzle maple syrup over and stir well. Let the mixture cool to room temperature.
  • Serve the granola with coconut milk and fresh blueberries. Store the rest in an airtight jar
