Sinigang na Isda

Ingredients
- 450g white fish fillets (like snapper or cod), cut into chunks
- 1 onion, sliced
- 2 tomatoes, quartered
- 2 cups okra, trimmed and halved
- 1 eggplant, cubed
- 2 cups water spinach (kangkong) or spinach
- 2 tbsp tamarind paste
- 6 cups water
- 2 tbsp wheat-free tamari sauce
- Salt, to taste
- 1 green chilli (optional)
Method
- In a large pot, bring water to a boil. Add onions and tomatoes
- Mix tamarind paste with ½ cup of the hot water, strain and add to the pot
- Add tamari and green chilli if using. Simmer for 5 mins
- Add eggplant and okra, cook for 3-4 mins
- Add fish chunks and simmer for 5 mins
- Add water spinach and cook for another 2 mins.
- Adjust seasoning with salt if needed.
- Serve hot with steamed rice on the side
