Pear & Cinnamon Almond Muffins

These delightful moist fruity muffins make a wholesome breakfast option or nourishing afternoon snack. Leave the skin on your pears for extra fibre and nutritional goodness.

Ingredients

  • 2 cups almond meal
  • 2 tsp baking powder
  • Pinch sea salt
  • 1 tsp ground cinnamon
  • ⅓ cup coconut sugar
  • ¼ cup milk of choice
  • ¼ cup olive oil
  • 3 organic eggs
  • 1 tsp vanilla essence
  • 2 medium pears, cubed
  • ⅓ cup walnuts, roughly chopped

Method


  • Preheat oven to 180°C and place muffin cups into a muffin tin.
  • Combine almond meal, baking powder, sea salt, cinnamon and sugar together in a medium bowl.
  • In a separate bowl whisk milk, olive oil, eggs and vanilla essence until well combined.
  • Pour wet ingredients into dry and gently combine.
  • Gently fold through the pear. Top each muffin with walnuts.
  • Divide mixture into muffin cups and bake for 25 mins until golden.
