Watermelon & Strawberry Salad

Watermelon is rich in lycopene, a natural pigment and powerful antioxidant that is responsible for giving watermelon its vibrant red colour and numerous health benefits

Ingredients

  • ½ medium watermelon, cubed
  • 250g strawberries, sliced
  • 250g strawberries, sliced
  • Handful fresh mint or basil, roughly chopped
  • 150g feta, crumbled
  • 2 tbsp extra-virgin olive oil
  • 1 tsp raw honey or pure maple syrup
  • 3 tbsp lime juice
  • Pinch sea salt

Method


  • Combine all dressing ingredients together in a small bowl.
  • Arrange watermelon, cucumber, strawberries and mint on a serving plate.
  • Drizzle in dressing and gently toss. Top with feta and serve.
