Zucchini & Almond Brownies

These healthy, gluten-free zucchini brownies are a delicious way to satisfy a sweet tooth while also incorporating the nutritional benefits of zucchini into your diet.

Ingredients

  • 1 cup zucchini, shredded
  • 1 large organic egg
  • 1/3 cup smooth almond butter
  • ¼ cup raw honey or pure maple syrup
  • 2 tbsp coconut sugar
  • 1 tsp vanilla bean extract or paste
  • ½ cup cocoa powder
  • 2 tbsp coconut flour
  • 2 tsp baking powder
  • 3 tbsp coconut oil, melted
  • ½ cup walnuts, chopped
  • Dark chocolate, melted
  • Almond or sea salt flakes

Method


  • Preheat oven to 200°C. Line a square baking tin with baking paper.
  • Using a paper towel, squeeze excess moisture from zucchini.

  • Add cocoa powder, coconut flour, baking powder and coconut oil and stir to combine.
  • Stir through zucchini and walnuts.
  • Pour mixture into pan and bake for 30-35 mins.
