Batched Bircher Muesli
Bircher muesli is a healthy and delicious breakfast and it can be made in advance in preparation for busy mornings. This Bircher will last four days in the fridge.

Ingredients
- 3 cups rolled oats
- ½ cup sunflower seeds
- ½ cup sunflower seeds
- ½ cup hemp seeds
- ½ cup flaked almonds
- ½ cup flaked almonds
- 2 cups coconut water
- 2 tsp vanilla extract
- Toppings Options
- Kiwi and blueberries
- Mango, passionfruit and coconut flakes
- Diced pear and sultanas
- Diced pear and sultanas
- Strawberries, raspberries and pistachios
- Poached or stewed fruits
- Goji berries and fresh apricots
- Banana and cinnamon, topped with a drizzle of nut butter, walnut pieces or cacao nibs
Method
- In a large bowl, add oats, seeds, almonds, plant-based milk, coconut water and vanilla and stir to combine.
- Transfer into 2 large airtight containers and place in the fridge.
- Tip: Use this Bircher muesli as a base for a variety of breakfasts. Spoon a serving of Bircher into a bowl and toss through a small grated green apple with the skin on. You can also stir through a spoonful of vanilla or natural yoghurt, or top with a little raw honey for extra sweetness.
- Note: Squeezing some lime or lemon juice over your shredded apple will prevent it from going brown. Then add the apple to your original batch mix.
