Greek Souvlaki
It’s simple to make Greek-style souvlaki at home. You just need a great Greek spice mix and a flame to cook over.

Ingredients
- 900g beef, diced
- 2 tomatoes, halved & sliced
- 1 tbsp dried thyme
- 2 lemons, quartered
- 1 tbsp dried oregano
- Dried oregano
- 1 tsp dried parsley
- ½ tsp granulated garlic
- ½ tsp garlic powder
- ¼ cup olive oil
- 1 tsp coarse salt
- 1 tbsp cracked pepper
- 1 pack pita bread
- 1 tub tzatziki
- 1 Spanish onion, halved & sliced
Method
- In a bowl, combine beef, thyme, oregano, parsley, garlic, oil, salt and pepper and marinate for 2 hours.
- Thread beef onto skewers.
- Heat barbecue over medium-high heat and once hot, place the skewers onto the grill.
- Turn skewers every min while basting with the leftover marinade until cooked.
- Remove from barbecue and cover with foil. Meanwhile, grill the pita.
- Reduce barbecue flame to low, brush pita with olive oil and turn for about a min on each side.
- Smear each pita with tzatziki and layer on the salad and beef.

- Tip: Use a piece of foil or baking paper to wrap the souvlaki to keep it all together.
