I know you’re going to find this hard to believe, but that crunchy, crispy coating on our friend The Colonel’s chicken can be made just as easily at home — without deep-frying! Try it and you’ll never look back.

Ingredients
- 2 large chicken breasts, thin ends trimmed
- Mayonnaise
- 600mL buttermilk
- 450g plain flour
- 3 tbsp mixed herbs
- 1 tsp celery salt
- 1 tsp pepper
- 1 tbsp smoked paprika
- 1 tbsp onion powder
- 1 tbsp salt
- 3 tbsp garlic powder
- Olive oil spray
- 4 brioche buns
Method
- Using a sharp knife, cut the chicken breasts horizontally to make 4 breast burgers.
- Place the chicken in a bowl with the buttermilk.
- Cover and marinate for 4 hours or overnight.
- In a large plastic bag, mix the flour and seasonings together.

- Using tongs, remove a chicken breast piece from the buttermilk and drain for a few secs.
- Place it in the seasoning bag and shake to coat.
- Place it back in the buttermilk and into the seasoned coating once more. Place chicken onto the baking tray.
- Repeat process until all 4 pieces are coated.
- Spray the chicken with olive oil spray and bake for 40 mins. Halfway through, turn and spray again.
